Twisted Track Brewpub is a fast paced, growing business nestled in the beautiful Blue Ridge Mountains of Roanoke, VA. We are looking to hire a Sous Chef to join our team. A successful Sous Chef is a strong communicator, organized and showcases in-depth knowledge of various cuisines, stations on the line, cooking styles, ingredients, equipment and processes. We are looking for creativity, strong leadership and management experience (preferred). Responsibilities for Sous Chef
• Participate in all kitchen activities, including food preparation and production, measuring ingredients and food portions
• Manage and train kitchen staff to adhere to set standards, procedures, department rules and sanitation requirements
• Monitor holding and storage operations, stocking and food rotation, and guarantee food service sanitation standards are met
• Work with management to create an efficient, cost-effective operation with profitability of food production as the goal
• Constantly monitor and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order
• Guarantee that food products, presentation, and plating are of the highest quality, and are prepared to serve in a timely manner
• Strive to adhere to the highest standards of food quality, preparation, recipes, and presentation.
• Assume the role as Executive Chef in his or her absence
• Open and close the kitchen, and other responsibilities assigned by Executive Chef as necessary
• Work to maintain a teamwork attitude between the front and back of house staff through proper communication and delegation of tasks to ensure smooth service and kitchen operations
Qualifications for Sous Chef
• High school or GED equivalent required, formal culinary training or associate degree in culinary arts preferred
• Minimum 2-5 years cooking experience in a restaurant or hotel environment and experience in a culinary leadership role preferred. Must possess consistent and stabile work experience.
• Ability to communicate clearly with managers, kitchen and dining room employees, and guests.
• Safe Food Handling Certification
• Ability to stand for long periods of time, and working long hours in hot conditions
• Must have experience calculating figures and amounts and performing mathematical functions to meet the business needs Purchasing and vendor relations preferred.
• Knowledge and experience using knives and equipment, such as grills, ovens, steamers and warmers and smokers in food preparation.
