Dietary Supervisor
JOB SUMMARY:
Prepare and serve a minimum of three nutritionally adequate, palatable meals and snacks as per daily requirements if or as needed to assist dietary staff. Orders food products per menu as needed to meet daily requirements. Responsible for hiring, training and scheduling Food Service staff.
GENERAL HEALTH REQUIREMENTS:
The necessary 2-step tuberculosis test within 30 days before or 7 days after employment.
GENERAL RESPONSIBILITIES:
Supervision of dietary staff, reporting any issues to the Administrator.
Assist with preparing and serving meals as required by the standards set forth by the state regulations as needed.
Review all planned menus provided by food service company.
Work with a registered dietician for approval of menus as required by the standards set forth by the state regulations.
Insure the kitchen, dining room, and food storage areas are properly maintained, keeping areas clean and free of possible contamination.
Assure that all meat processing occurs at an approved N.C. Department of Agriculture processing plant.
Prepare special diets as ordered by the resident’s physician.
Assure at least one week's supply of food is maintained in the Home.
Order necessary food products to meet the needs of the Home assuring that all foods are available to meet the requirements of the daily menus.
Knowing and protecting the resident’s privacy rights under the HIPPA regulations.
Cooks shall have access to residents’ protected health information as necessary to provide specific activities or plan therapeutic menus according to physicians’ orders.
Required uniform is to be worn at all times and are to be neat and clean. Hair nets and/or hats are to cover all of the employee’s hair.
Men - Facial hair is to be shaved/trimmed daily. Hair is to be neat and clean.
Women – Excessive perfume and jewelry are not to be worn. Hair is to be neat and clean.
EDUCATION, TRAINING, and EXPERIENCE:
Experience in food service serving large quantities.
High school graduate, training and experience desired but not required.
ACCOUNTABILITY:
Responsible for the day-to-day operations of the kitchen and dining room.
Responsible for the proper preparation and quantities of food shown on the daily menu.
Responsible for a sanitary grade of 95 or above at all times.
